Lets get cheery at snack time

This year, Washburn enrolled 6,691 students with almost all students paying close to nine thousand dollars a school year, not including room fees and book expenses.

After buying school supplies, room décor for your dorm or new apartment, the required course materials and whatever else that the students have been expected to pay, you might notice that you will have to buy food sooner or later. Now that classes are rolling back into the daily routine, you have less time to cook.

Below are two Cheerios Cereal inspired snack recipes that are cost savvy, nutritious and swift. They're perfect for the college student on a budget.

Applesauce Cheerio Muffins

What you will need:

  • 2 cups of Cheerios cereal
  • 1 ¼ cup of all-purpose flour
  • 2 tablespoons of vegetable oil
  • 1 egg
  • ½ cup of packed brown sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking powder
  • ¾ teaspoon of baking soda
  • 1 cup of unsweetened applesauce
  • 1/3 cup of 1% milk
  • A cupcake/muffin tin

 

Steps:

  1. Preheat the oven to 400 degrees.
  2. Oil the muffin pan or spray with cooking spray.
  3. Crush the cheerios. (The most effective and quick way I have found is placing the cheerios into a bag and rolling over them with a tortilla roller.)
  4. Add each of the ingredients in the order listed into a large mixing bowl.
  5. Pour the mix into the pan.
  6. Put the muffins into the oven, and cook them until the muffins are golden brown, almost like banana bread. This should take, at most, 23 minutes.
  7. Enjoy!

 

Gluten-Free Cheerios smoothies

*makes two 8 oz servings*

What you need:

  • cup of milk.
  • 1 cup of cheerios cereal
  • 1 cup of fresh fruit (Unthawed blueberries are recommended.)
  • 1 ripe banana (Cut the banana into four large chunks.)
  • 1 cup of ice.

 

Steps:

  1. Add ingredients into a blender in the order they are listed.
  2. Blend until desired consistency.
  3. Enjoy with your Cheerios muffins.
